José is a pharmacist with a Ph.D. in Food and Nutrition from the University of Barcelona (Spain) and completed a post-doctoral grant at the University of São Paulo (Brazil). He is a research fellow, under the supervision of Prof. Pedro Mena. His is interested in targeted and untargeted metabolomics approach to study of bioactive compounds in food applied to gastronomy, bioavailability and metabolism.
